Tacos de Papas is a delicious meal that you can make easily with the whole family helping out. Tacos de papas is fun to say and means potato tacos. of course you can substitute any filling but the potatoes done this way has become one of our family's favorites!

Great news too all of the ingredients are in the pantry already!  Hope you saw our video explaining the Arc of Life Pantry Series, if not go here to check it out. The idea is that we can stock our pantry and use those ingredients to make some delicious food. See the video and description for the shopping list for your pantry staples.


Making the filling from scratch is super easy and you can add store bought salsa, hot sauce, guacamole and tortillas. Option to make your own corn tortillas, guacamole and pico de gaillo following the recipes below. Whatever option you choose store bought or made from scratch, promise us not to forget the shredded cabbage on top!

Tacos de Papas

  • 1 tbsp Olive oil 
  • 1 tsp +/- Himalayan salt
  • 3 large Potatoes
  • 1 medium Onion finely chopped
  • 1 clove of garlic minced
  • Pinch of cumin
  • 1 cup Broth (Or apple juice or water)
  1. Cut potatoes into 1cm cubes and soak in cold water for 5 minutes. 
  2. In a large pan over medium to high heat add olive oil to the hot pan with salt and cubed potatoes
  3. Cook for 5-10 minutes stirring or tossing occasionally until the potatoes start to turn a bit golden brown on a few sides. 
  4. Add chopped onion, garlic and cumin. Keep browning for another 5 minutes. Then add 1 cup of broth to the pan, cover and simmer on medium/low heat for 15minutes until potatoes are desired consistency and not too saucy.
  5. Optional: while the potatoes are simmering make Guacamole, Pico de Gaillo, Corn Tortillas and shredded cabage.

Guacamole

Make your own by mashing in a bowl to desired consistency:

  • large ripe avocado
  • 1 green onion finely sliced
  • 2 tbsp finely chopped fresh Cilantro
  • 1/2 lime juiced
  • 1 tbsp sugar
  • 1/4 tsp salt
  • Dash of hot sauce

Pico de Gaillo

Make your own or use store bought Salsa:

  • Large tomato diced
  • 1 Green onion finely chopped
  • 2tbsp Cilantro finely chopped
  • 1/2 lime Juiced
  • salt and hot sauce to taste

Finely sliced Cabbage

Red or green cabbage will give an amazing texture to your tacos de papas. See how finely you can cut the strips! great on its own or add to a bowl and toss with a bit of white vinegar, spoon of mayo or both!

Make Corn Tortillas

Make your own with this recipe or heat up store bought ones in a cast iron pan before serving! Watch The Video

Assemble Tacos de Papas!

Take a soft corn tortilla in the palm of your hand, add guacamole, Papas, Pico, hot sauce and shredded cabbage fold it over and enjoy!
