Roasted Tomatoes with Goat Cheese
6 Roma Tomatoes or equivalent grape tomatoes
1 Tbsp Raw Sugar
2 heads of fresh garlic
2tbsp olive oil
½ tsp Himalayan salt
½ tsp dried basil
Cut tomatoes into 1” pieces, if using grape tomatoes cut in half, crush garlic cloves and remove all paper/tough ends.
Combine in a parchment paper lined 9” square pan tomatoes, garlic, sugar, olive oil, salt and dried basil for 40 mins at 400deg or 2+ hours at 300deg (top shelf on BBQ works great too)
When done roasting plate in a medium sized bowl, add 1 small package goat cheese, top with fresh basil, balsamic vinegar or balsamic glaze and fresh pepper. Drizzle with more of that great quality olive oil to finish.
Great cold or hot with crackers, crostini or even as a pasta sauce (blended or whole)
For Vegan version Omit Goat cheese, Just as good!
